La convivenza forzata prima con Scipione e ora con Caronte mi ha praticamente obbligata ad allontanarmi dal mio amatissimo forno. Quindi mi sono buttata su un’altra versione del cheesecake ai lamponi (ecco la prima versione) ovviamente senza cottura e devo dire che il risultato è stato entusiasmante.
A voi la ricetta!
Per la base
- 75 g di biscotti secchi
- 25 g di amaretti
- 45 g di burro
Per la crema
- 165 g di mascarpone
- 150 g di philadelphia
- 5 g di colla di pesce
- 70 g di gelato alla panna
- 200 g di lamponi
- 60 g di zucchero a velo
Per la decorazione
- 20 g di lamponi
- 1/3 limone succo
- 2 cucchiaini di zucchero a velo
Procedimento
Sbriciolate i biscotti con gli amaretti e versatevi il burro fuso. Amalgamate bene e stendete il composto in una tortiera apribile da 20cm e pressate bene con un batticarne.
Lasciate riposare in frigo per almeno 1/2 ora.
Preparate la crema amalgamando il mascarpone con la philadelphia. Aggiungete lo zucchero a velo e mescolate. Fate ammorbidire la colla di pesce nell’acqua, strizzatela e fatela sciogliere in un paio di cucchiai di latte tiepido. Lasciatela raffreddare ed aggiungetela alla crema amalgamando bene.
Aggiungete anche il gelato e riponete in frigorifero.
Nel frattempo lavate e asciugate bene i lamponi, prendete la base, versatevi un paio di cucchiai di crema e adagiatevi sopra i lamponi fino a ricoprire la superficie.
Infine versatevi la crema rimanente e livellate la superficie.
Fate riposare in frigo per una notte.
Il mattino seguente preparate una coulis veloce con i lamponi, il succo del limone e un paio di cucchiai di zucchero a velo. Setacciate e versatela sulla cheesecake.
Decorate con un i lamponi e dello zucchero a velo.

The life with Scipione and now Caronte forced me to avoid the use of my beloved oven. So I prepare another version of wihout cooking-raspberries cheescake (the 1st version) and the result was exciting!

For the basis
- 75 g biscuits
- 25 g amaretti
- 45 g butter
For the cream
- 165 g mascarpone
- 150 g philadelphia
- 5 g gelatin leaves
- 70 g ice cream
- 200 g raspberries
- 60 g icing sugar
For the decoration
- 20 g raspberries
- 1/3 lemon juice
- 2 tps icing sugar
Procedure
Prepare the base crumbling the biscuits with your hands (or in another blend) adding then the amaretti and the melted butter. Mix it all until it gets smoother. Place the dough in a 20 cm diameter pan, press it and keep it refrigerated.
Prepare the cream mixing mascarpone, philadelphia and icing sugar. Hydrate the gelatin leaves , squeeze and dissolve in a couple of warm milk. Leave to get cold and add it to the cream. Add the ice cream aand mix well.
Keep it in the refrigerator.
Wash and dry the raspberries. Put a couple of tbsp of cream on the basis and put the rasperries covering the surface. Spread the remaining cream on the pan. Keep into refrigerator night-long.
Prepare the glaze: wash the raspberries, put them in a bowl and then add lemon juice and 2tsp icing sugar and blend it all. Put the puree through the sleeve, in order to remove those little seeds. Spread on the cheesecake.
Decorate with some raspberries and icing sugar.
